Cornichons in a dip


Ingredients (4 servings)

  • 4 large jacket potatoes (each approx. 200 g)
  • 2 onions
  • 150 g acon
  • 150g Barrel Pickles
  • 100 g cream cheese
  • 300 g quark
  • 1 tbs. medium hot mustard
  • Salt, freshly grounded mixed peppercorns
  • Sugar

Pre-cook potatoes in boiling water for approx. 20 minutes. Pre-heat the electric oven to 200 degrees. Peel onions, cut them and bacon in strips and roast in a non-stick pan. Put foil around the potatoes and bake in the oven for a further 20 – 30 minutes (electric and gas oven: 200 degrees/level 4, fan oven 180 degrees). Dice the cornichons finely, mix with cream cheese, quark and mustard and season generously with salt, pepper and sugar. Put a cross in the potatoes, press them slightly apart, place the cornichon dip on the top and serve with the onion-bacon mixture as a topping. If liked, garnish with dill.
