“Gourmet” Chicken Breast Filet

Ingredients (serves 4)
- 4 chicken breast filets (each approx. 150 g)
- salt, freshly ground pepper
- 2 slices Serrano ham
- 4 sage leaves
- 4 tsp Horseradish with Cream
- 2 shallots
- 2 tbsp olive oil
- 400 ml poultry stock
- 100 ml cider (or, alternatively, apple juice)
- 1 sour apple
- 1 jar of Gundelsheim Barrel Red Cabbage
- 1 tsp pink peppercorns
- dark sauce binder
Wash the chicken breast filets, dab them dry, cut a pocket in each and season inside and out with salt and pepper. Finely dice the ham and sage leaves, mix with horseradish, and stuff the filets, fixing the openings with small wooden sticks. Peel the shallots and finely dice. Heat the oil, fry the filets and diced shallots, add the stock and cider and braise in a covered pan in a covered pan for 20 minutes. Peel, quarter and core the apple, cut into slices and add about five minutes before the end of cooking time. Heat the red cabbage according to instructions. Season the sauce with salt and pink pepper and thicken with some sauce binder. Serve the filets with the red cabbage and sauce. Goes well with green tagliatelle.
